I’ve been writing these things for over a decade and I’ve always wanted to share new recipes to help my clients. So here goes…
Baked Potato Salad
I’m a big fan of potato Salad, it is an easy, simple way to cut down on the amounts of fat that can be added to a low-carbohydrate diet. This is because in this recipe you will also use less oil and low calorie foods that are also lower in calories, like white rice, olive oil, and fish. (Plus you can use a non starchy vegetable instead of pasta!)
This recipe makes a great base meal, especially with pre-made veggies. If you choose to use your own vegetables or other low carb or low fiber options, you’ll need a lot of extra water for the vegetables, so instead I used a whole tomato and diced bell peppers. You can substitute more vegetable for less water.
If you are making salads, you might not be sure how to cook these. But in my opinion, adding more water is a healthy way to reduce the amount of fat in our bodies. I know that it’s hard to get rid of all those low carb, non-starchy sources of fat in your diet but the fact that using a whole tomato and diced bell pepper is good in and of itself can help.
How to Make Potato Salad:
Preheat your oven to 350 degrees. You then mix the potato salad and salad dressing together. Pour the water and the potato salad into a baking sheet. Bake the kale in the oven.
Remove the broccoli from the eggplant. Let cool completely on a low heat. If your kale is too hard to stick into the broccoli’s crust, remove it and keep it just below 180 degrees until it’s completely cooled. Once the kale has cooled to a temperature of 180 degrees, let it sit in a covered bowl overnight to keep it from drying out.
Add more water if the vegetables are too much. Add more salt if you’re using salt or sweetener. If you are using water, the water goes to the bottom of your baking sheet and is too thick or too dry.
Add the cooked kale to the olive oil. Blend the herbs together until you have a mixture that resembles a large pot of liquid.
You have mashed potatoes for the summer.
